What Makes a McKibbon Food and Beverage Director?

As a key member of the leadership team, the food and beverage director is accountable for the food and beverage outlets and meeting space. The food and beverage director is committed to guest satisfaction and providing a great

Primary Responsibilities

  • Lead Food & Beverage operations to ensure the highest level of guest satisfaction is being met.
  • Move throughout the facility and monitor the action of food prep and serving areas to ensure that associates are meeting food and beverage quality, brand, and service standards.
  • Assures that effective orientation and training for new staff and professional development activities for experienced staff are planned and implemented.
  • Inspect to ensure that all safety, sanitation, energy management, preventive maintenance and other standards are consistently met.
  • Assures that all standard operating procedures for revenue and cost control are in place and consistently utilized.
  • Works with corporate team, hotel sales to plan and approve external and internal marketing and sales promotion activities for the food and beverage department.
  • Helps plan and approve the organizational chart, staffing, scheduling and job description/specifications for all department staff. Conduct Staff performance reviews in accordance with Mckibbon Hospitality standards. 
  • Manages the long-range staffing needs of the departments
  • Establishes quantity and quality output standards for personnel in all positions within the department.
  • Ensures that all legal requirements are consistently adhered to including wage and hour and federal, state and/or local laws pertaining to alcoholic beverages and food safety and sanitation.
  • Work with the hotels’ sales team to ensure that all meeting spaces are properly supplied and maintained.
  • Work with the General Manager and Assistant General Manager on administrative duties, including tracking expenses, maintaining profitability, and invoice input.
  • Audits and approves payroll.
  • You will be responsible for maintaining the inventory of the Food and Beverage Department (i.e. budgeting, food costs, coding invoices, inventory, reconciliation etc.)
  • Prepare and monitor annual budget, revenue goals and the expenses for the Food and Beverage Department
  • Generate various (weekly/monthly) business volume forecasts and plan accordingly.
  • Ensure that all standard operating procedures for revenue and cost control are in place and consistently utilized.
  • Must be effective in handling problems, including anticipating, preventing, and identifying opportunities and solving them.  Respond to guest complaints in a timely manner.
  • Collaborate with the Corporate Food and Beverage team on product pricing, menus, and all things F&B.
  • Perform other duties as requested by management.


Requirements:

  • 5 years experience in a food & beverage management position with multi outlets.
  • Experience working at a lifestyle hotel or dual brand hotel with food and beverage outlets.
  • Extensive knowledge and experience of the restaurant industry, its service, facilities, and equipment.
  • Ability to work various shifts based on need ad level of business.
  • Strong leadership and communication skills. 
  • Proficient in cost analysis, budgeting, and forecasting
  • The ability and drive to personify our culture in every interaction with guests and associates
  • The ability to manage, train and develop 50 plus associates .
  • The ability to deliver on the quality of service that guests deserve and expect
  • ServSafe manager certified.
  • Alcohol compliance certified.
  • The ability to work a varied schedule that includes weekends, holidays, and special event


Physical Requirements

  • Must be able to push/pull/lift up to 50lbs.
  • Must be able to endure long periods of standing, sitting and walking
